Making Gluten-free Cookies at Home
I love making great tasting, gluten-free treats that fully satisfy a sweet tooth, but they are still healthy and enjoyable. Making delicious deserts is my passion, and those chocolate chips cookies provide a great energy boost when I need it the most. They are our favorite cookies for any travels. Just make them fresh ahead of time and enjoy your trip.

You can use any of your favorite nuts in this recipe. If you choose to make a tasty treat for today, or a couple of days later, this one will not disappoint you.
It keeps fresh for at least a couple of days, so it is my favorite when traveling. Just fill a container and enjoy it while on the road!
Ingredients
- 1/2 cup of coconut oil
- 1/2 cup of honey
- I egg
- 1/2 teaspoon (tsp) vanilla
- Pinch of salt
- 1/2 cup of rice flour
- 1/2 cup of potato starch
- 1/2 tsp xanthan gum
- ¾ cup of unsweetened organic coconut (shredded)
- I ½ cup chocolate chips (100% organic cocoa chips)
- I cup of ground flax seeds
- I cup ground nuts (almonds, walnuts, pecans, or mix)

Step by Step Instructions
Step 1
Mix everything together, starting with beating the egg. You will have to press it together to create a dough. For easier shaping, chill in the fridge for an hour.
Step 2
Preheat oven to 375 F. Put parchment paper on baking sheets.
Step 3
Form mixture into about 2 tablespoon mounds and keep pressing to create cookies.
Step 4
Bake for 6 minutes at the bottom rack and place on the upper rack for additional 4-6 minutes.
Step 5
Cool for IO minutes and enjoy!
