Since I travel a lot, I developed lots of gluten-free healthy recipes that can be made ahead and taken on the road. This dish is my to go to travel dish, as well as light and healthy lunch.

As for the salad part, feel free to supplement with your favorite vegetables. I guarantee that your taste will be satisfied anyways.
Ingredients
• 2 cups of quinoa
• lettuce
• pepper
• avocado
• green onion
• 1/2 teaspoon of Himalayan salt
Healthy Lunch
Quinoa Salad makes a great quick lunch, which is also great and refreshing on the road as well. I love making it when I travel, as it holds the delicious and fresh taste for hours and its easy to make and pack.
Step by Step Instructions
pStep 1
Cook quinoa first using 2 cups of quinoa, 3 cups of water and 1 /2 teaspoon of Himalayan salt.
It will cook in 20- 30 min.
Step 2
Let quinoa cool off.
Step 3
Chop all other vegetables and add cooled quinoa at the end.
Step 4
It makes great quick lunch, which is also great and refreshing on the road as well.
Step 5
They can also be easily pre-prepared and stored in your fridge for later.
