Making Probiotic Kombucha Tea at Home
Kombucha has antibiotic-resistant probiotic yeast. In addition to the good bacteria in kombucha there is a special probiotic yeast called Saccharomyces Boulardii (S. boulardii) that is resistant to antibiotics, which makes it incredibly useful for maintaining a healthy gut.

Kombucha is fun to make and I have lots of recipes. I encourage you to discover the power that fermented foods can bring to your life. Not only is the taste of fermented foods unique and delicious, but they contain what we need to support the body in so many ways. I’m drinking my kombucha every day and even though I can’t have any dairy based probiotics, kombucha and other fermented foods make a huge difference in my gut health and digestion.
Ingredients to make one gallon of Kombucha
- Kombucha starter (the mother)
- 4 organic tea bags (2 black and 2 green tea)
- 1 cup of organic cane sugar
- filtered or distilled water
Healthy Probiotic Drink
Grocery stores or health food stores sell many different brands of kombucha, and they are delicious! Generally speaking, they aren’t near as strong as homemade kombucha. You’ll also have lots of cultures to share with your friends. You just need a culture, which can last forever if you take care of it, and some tea and sugar. That’s why I recommend that you get a kombucha starter and make it yourself! Plus it’s cheaper to make it in the long run, because you’ll have an endless supply of kombucha.
Step by Step Instructions
Step 1
Stage one: How to make Kombucha tea.
Bring about 1 quart of water to boil.
At the same time get clean pot that you will use to make the tea and sugar mixture.
Measure one cup of organic cane sugar (this amount will make 1 gallon of Kombucha tea).
Pour sugar into pot first.
Next, pour boiling water over the sugar and mix it till it dissolves.
Prepare four bags of organic tea. I recommend using 2 bags of organic green tea and 2 bags of organic black tea. This combination makes great Kombucha tea. Put four tea bags into hot water/sugar mixture.
Cover with lid and let sit until it cools off. Remember never to pour hot tea over the mother, as you will kill the living organisms!
Step 2
Once your tea is cool enough (about body temperature) put the mother and some existing Kombucha tea (½ – 1 cup is enough) into 1 gallon jar.
Take out your tea bags
Next you pour your sweet tea mixture in.
Top up with filtered (or distilled) water. Please don’t use tap water, as it contains chemicals that can kill your bacteria in tea.
Step 3
Cover with kitchen towel.
Put elastic over to prevent anything getting into your drink.
You are done. Let it sit on your countertop or other place for 7-10 days.
Step 4
Stage two. How to store Kombucha tea
Once your Kombucha tea sat at your countertop for about 7-10 days and you are happy with the taste, you are ready to strain it and enjoy.
Uncover your drink and prepare smaller jars with lids that will fit into your fridge. I use 1 and 2 quarts jars, as they work perfectly.
Get a fine strainer ready to strain your drink. Strain the Kombucha tea right into prepared jars.
Put the lid on and place it into the fridge. Your Kombucha is ready for drinking right away!
Step 5
You can keep it in the fridge for two weeks without any change in taste or loosing great properties of this ancient healing drink. Enjoy!
The best thing is that in a week or so, you will have your second batch ready, just follow the steps from the beginning and enjoy endless supply of your own Kombucha tea.
