Making Gluten Free Lemon Squares at Home
I have been on a mission of making simple, fast treats that fully satisfy a sweet tooth, but they are still healthy and enjoyable. Making gluten free healthy deserts is my passion, and those lemon squares are truly delicious. They can also be easily stored in your fridge and used as a refreshment on hot sunny days.

A combination of light crust with amazing filling with full lemon taste is just what the doctor ordered.
Ingredients
Crust:
- 1 cup almond flour
- 1 cup coconut flour
- 1/4 teaspoon ground cinnamon
- Pinch of salt
- 2 tablespoon (TBS) organic coconut sugar
- 6 TBS melted organic coconut oil
- 2 TBS pure vanilla extract
Filling:
- 1/2 cup coconut flour
- 4 tablespoons organic coconut sugar
- 8 large eggs
- 1 cup fresh-squeezed lemon juice

Step by Step Instructions
Step 1
Heat oven to 350 F. Line 8-inch square baking dish with parchment paper.
Step 2
To make crust, in large bowl, combine almond meal, coconut flour, cinnamon, salt, and coconut sugar. Add melted coconut oil and vanilla extract. Combine all ingredients together and press dough evenly into bottom of baking dish. Bake for 10 minutes, until lightly golden around edges. Remove from oven and set aside.
Step 3
To make filling, stir coconut flour and coconut sugar together. Whisk in eggs and lemon juice.
Step 4
Pour filling into crust and bake 10-15 minutes, until golden around edges.
Step 5
Let cool at room temperature then refrigerate a minimum of 2 hours before cutting into squares.
