Using Super Healthy Kale in Tasty Soup Recipe

Kale has more considerable cholesterol-lowering benefits if it is lightly cooked (more than when consumed raw). Kale is a superfood that our diets often lack. It is in our best interest to bring it back to our table more often.

I like using it in a way that complements its taste while offering all the benefits that this member of cruciferous vegetables offers.

Don’t get tempted to throw out kale stems. Stems contain lots of vitamins and can be used to add great flavor and creaminess to your soup. Just cut off leaves from the stem and keep stems to add to your soup. Once cooked in the rest of the soup, pull stems out and blend and strain back into the soup.  

 

Ingredients

  • 1 tbsp coconut oil
  • 3 cups kale, chopped finely (cut out stems, but keep them for added taste)
  • 2 small potatoes, peeled and diced in 1-inch cubes
  • 2 medium tomatoes cut into small pieces
  • 1 carrot, diced
  • 1 stalk celery, diced
  • 1 medium yellow onion, diced
  • 4 cloves garlic, pressed
  • 4 cups water
  • 1 tsp dried thyme and caraway seeds
  • 1 tsp dried oregano or sage
  • to taste Himalayan pink salt and ground black pepper

Step by Step Instructions

Step 1

In a medium stock pot heat coconut oil on medium heat. Add onions and sauté until translucent, 5 minutes. Add kale and sauté for 5 minutes. 

Step 2

Add water, carrots, kale stems (cut in half), celery, tomatoes and potatoes and reduce heat and simmer for 15 minutes (10 minutes when using Instant Pot).

Step 3

Add caraway seeds, salt, oregano, sage, garlic and bring to a boil. 

Step 4

Pull out kale stems and 1-2 cups of soup broil and place into high-power blender. Blend for 40-60 seconds and strain back into the soup (you are adding only the liquid, no fibrous parts of stem).

Step 5

Check the taste and add spices if needed.

Serve and enjoy
