I love making simple, fast treats that fully satisfy a sweet tooth, but they are still healthy and enjoyable. Making raw healthy deserts is my passion, and this tasty blueberry pudding provides a great energy boost when I need it the most. You can simply pour it into small mason jars that can be easily stored in your fridge and ready for you or your guests when you need them.

I use raw cashews in this recipe, but feel free to supplement with your favorite nuts. If you choose to just make a tasty treat, but don’t care if it is raw, just supplement raw ingredients for those that are available in your pantry – I guarantee that your sweet craving taste will be satisfied anyways.
Ingredients
• 2 cups of organic blueberries (skin on)
• 1/2 cup of organic, raw cashews
• 2 tablespoon (TBP) raw honey
• I TBP lemon juice
• I TBP organic coconut oil or butter

Step by Step Instructions
Step 1
Put blueberries and all liquids into blender first and blend it.
Step 2
Add cashews and coconut oil last and blend everything until smooth and creamy.
Step 3
That’s it – you have made your treat already!
Step 4
I recommend placing pudding in the fridge to cool it before eating, but it can be eaten right away as well.
Step 5
After chilling it in the fridge add a layer of fruit of your choice. Enjoy!
